It’s always a pleasure welcoming Byron Bay chef Ash to The Kip - She wasn’t a stranger to the family when she came back this year, bringing her significant other, Ferry. The duo spent a week at The Kip working with us on the re-design of our menu (a.k. making us put on a few extra pounds trying every single on our new recipes), and we fell in love with Ferry just as much as we first did with Ash.
We sat down with the couple to chat all things cultures, cuisines and red wine over sunsets.

Your favourite spot in Sri Lanka?
A: I love any of the beaches along the South Coast at sunset or the rice paddies filled with peacocks when you venture slightly inland.
F: my favorite spot is Lighthouse Ahangama at sunset .
What’s your ideal Sunday like?
A: Depends on the weather! If it’s beautiful and sunny I love a beach walk and then a long day at the beach with friends, umbrellas and eskys full of cold drinks and homemade snacks. Then an afternoon cocktail somewhere while we plan what feast to cook up for dinner.
F: Stock up the van and go camping, preferably near the beach, go for a sunset surf and cook dinner on a fire pit with a nice bottle of red wine. But I could do what Ash would do, too😉
A: Yeah I like ferry’s idea too!
Where do you find inspiration?
A: Always from the local produce!! And from travels. Different cultures, cuisines and techniques. I love to make use of what’s readily available and sustainable and go from there. It’s so exciting to produce a feast when at first glance it seems like you don’t have much. I’d love to be able to inspire people to do that more in their homes as well. Maybe with a cookbook one day!

‘Slowing down’ means for us…
F: Ash does not know what slowing down means! For myself it means lying in a hammock in between 2 palm trees drinking cocktails out of coconuts. Just come to The Kip, then you will know what I mean!
A: haha! Yep, I do find it hard to slow down! Even when I’m reading a book at the beach, it’s usually a cookbook! But I also see slowing down as being really conscious of how I’m spending my time and money. If I can spend a whole day being creative and cooking a feast for friends with produce from friends gardens and local producers, that makes me very happy. And I’m currently a bit addicted to Sex and the City!
